¾ Goody Elbow macaroni pasta pack (shape 19)
1 medium onion, finely chopped
1 garlic clove, mashed
¼ cup olive oil
1 tbsp olive oil
¼ cup coriander, chopped
1 tsp paprika
2 tsp black pepper
3 small tomatoes, peeled and chopped into small pieces
1 tbsp tomato sauce
2 medium green, yellow and red bell peppers
Salt to taste
1.Cook pasta as indicated on the pack.
2.Clean completely the pepper from the inside and remove the seeds and white pulp, keeping the heads aside.
3.Put the oil in a pot and heat, and then add the onion, garlic, spices and salt, and toss until the onions are well cooked, set aside to cool.
4.Add the pasta, tomatoes, tomato sauce, coriander and parsley to the previous mixture.
5.Fill the peppers with the mixture then cover them with the heads.Place the stuffed bell peppers in a baking tray greased with olive oil and grease each one with olive oil as well.
6.Cook the tray in a hot oven (temperature 180˚) for 35 minutes until it is well cooked,then serve.
