Be creative. A slice of this gorgeous bread would go perfectly with salads or vegetarian mains.
6 tbsps Goody Velor Milk Powder
1 ¾ -2 cups warm water (depending on the
1 ½ tsp dry yeast
1 tbsp tomato paste
2 tbsps sugar
6 cups all purpose flour, sifted
2 tsps salt
5 tbsps extra virgin olive oil
5 tbsps sun dried tomato oil
¾ cup sun dried tomatoes, drained from oil
1 onion ,thinly sliced into semi circles
1- Mix the milk powder with warm water. Divide the liquid milk into 2 parts. Mix the first part with tomato paste, and mix the second part with yeast and 1 tsp sugar. Leave yeast to double in size.
2- To make the bread by using Kenwood kitchen machine attaching the dough hook. Mix the dry ingredients first (flour, salt and the remaining sugar). Then add the liquid ingredients all at once. Combine using mixer for 5-10 minutes.
3- Take out dough from the kitchen machine. Knead by hand until firm, smooth, and not sticky. If dough is sticky, add flour.
Place the dough in a bowl and cover well with plastic food wrap. Leave to rise for 2 hours in a warm and humid place.
4- Take out dough from bowl and lightly press it down to eliminate any air bubbles. Add the onions and sun dried tomatoes. Shape the dough into a loaf.
5- Leave the dough to rise one more time in a warm and humid place for 45 minutes. In the meantime, heat oven to 190°C (375 F)
6- Brush the dough with an egg and bake for 30-45 minutes. To test bread for doneness, gently tap bread with your finger. If the bread sounds hollow then it’s done.
7- Take out bread from oven and brush with olive oil or sun dried tomato oil. Leave bread on a cooling rack to cool. This will prevent moisture from building up on the base of the bread. Serve warm.
• Let bread rise according to the specified time in the recipe.
• The sun dried tomatoes must be drained from oil.
• Brush bread with oil immediately after taking it out from the oven.
• When baking any type of bread, the bread must rest for at least 20 minutes.
