Sweet Potato and Cauliflower Soup
Enjoy the best taste with the sweet potato and cauliflower soup. Heat before serving and garnish with some broccoli pieces.
½ Cauliflower Head, diced
1 Tbsp Olive Oil
3 Sweet Potatoes, diced
1 Onion, minced
1 Tbsp Garlic powder
2 Goody Chicken Stock Cubes dissolved in 7 cups of Water
Salt and Black Pepper to taste
- Heat the oven over medium heat.
- Boil the Cauliflower for 5 minutes.
- Heat the oil in a deep pot over medium heat. Add the sweet potatoes, onion, garlic, chicken cubes, salt and pepper; then stir the mixture. Reduce the heat and leave the mixture until it is cooked and the potato cubes become tender. Add the cauliflower to the mixture and leave it over the fire for 10 minutes; leave the soup until it cools then grind it until it becomes smooth. Heat before serving and garnish with some cauliflower cubes.
