Sweet Potato cut into cubes and boiled
Additions: Salt and Black Pepper to taste
1.In a pot over medium heat, heat the oil. Stir the potatoes, add salt and pepper. Put the potatoes in the oven for 8 minutes or until tender.
2.In another bowl put the corn, beans, peppers, onions, cilantro and avocado. Add the potatoes to the vegetables and mix it. Add the lemon juice, salt and pepper, mix them and serve.
