Sweet Potatoes with Mayonnaise Sauce

½ cup of Coriander, finely minced
¼ cup of Parsley, finely minced
1  cup of Mayonnaise
2  tsps of Green Pepper Cubes, minced
½ tsp Lemon Juice
½ tsp Salt
Sweet Potatoes:
5 Sweet Potatoes, peeled and cut into long slices 
½ tsp Paprika 
½ tsp Salt 
½ tsp Black Pepper 
½ tsp Garlic Powder


1.Place the mayonnaise in the bowl; then add the minced vegetables, lemon and salt,    and mix well.
2.Leave the mixture for at least an hour, and serve cold.
3.Heat the oven at 450oF.
4.Place the parchment paper on the tray.
5.In a large bowl, put the sweet potatoes with enough oil to cover it.Sprinkle the salt, black pepper, garlic powder, and bell pepper.Scatter the potatoes on the parchment paper in the tray.Bake until they turn into golden-brownish potatoes (for about 20 minutes).Let it cool from 5 to10 minutes before serving.
