1 tbsp vegetable oil
250gm minced beef
¼ tsp Garlic Powder
¼ Onion Powder
¼ tsp Dried Oregano
½ tsp Paprika
1 tsp Ground Cumin
½ tsp Salt
¼ tsp Black Pepper
1 cup Goody Red Kidney Beans, rinsed and drained
1 cup Goody Corn, drained
8 large Tortilla Bread, cut into 9 even triangles
2 cup shredded cheddar cheese
Toppings: sour cream, diced tomatoes, red onion, cilantro 


1.Preheat the oven to 180 degrees C. Spray 18 muffin cups with cooking spray.
2.In a pan over medium high heat, add the vegetable oil, when heated, brown beef. Add the garlic powder, onion powder, oregano, paprika, cumin, salt, pepper and mix well. Mix in the red kidney beans and corn. Remove from heat. 
3.Place one tortilla triangle in the bottom of each muffin cup. Layer 1 tablespoon of minced beef mix then top with another tortilla triangle and another tablespoon of minced beef mix and 1 tablespoon of shredded cheese. 
4.Bake for 15-18 minutes or until golden brown. Remove cupcakes from tin and top with your favorite taco toppings (like sour cream, diced tomatoes, onion or cilantro).
