Tum Yum Vermicelli Soup

It's really easy to cook true Tom Yum soup at home. It takes just about 15 min. First of all you'll need chicken stock and do not attempt to omit the coriander, as this is essential.

2 tbsp olive oil
3 spring onions, chopped
1 celery stalk, chopped
1 tbsp ginger, finely chopped
2 clove garlic, chopped
3 cubes Goody Chicken Stock, dissolved in 6 cups boiling water
¼ cup soy sauce
¼ cup oyster sauce
2 tbsp Goody Vinegar
1 tbsp Goody Hot Sauce
2 tbsp corn flour, dissolved in ¼ cup water
¼ Goody Vermicelli, broken
250 gm shrimp ,cleaned and boiled
1 big can Goody Whole Kernel Golden Corn, drained
½ bunch cilantro, leaves only


1.Heat oil in a deep cooking pot. Add the onions, celery, ginger and garlic. Sauté until vegetables are tender. Add the stock, bring to a boil, then add the corn, soy sauce, oyster sauce, vinegar and hot sauce. 
2.Cover pot and turn down heat. Simmer for 2 minutes  Add boiled shrimp then add the vermicelli. Leave soup to simmer for another 3 minutes. 
3.Add the corn flour (after dissolving it in some water) and leave to simmer. Add the cilantro leaves and serve.
