3 cans Goody albacore tuna 
1 tsp saffron 
3 tbsp rose water 
Dash of crushed cardamom
5 tomatoes, peeled seeded and blended 
9 tbsp olive oil 
2 onions, thinly sliced 
1 clove garlic, crushed 
¼ tsp of (cinnamon, cumin, cardamom, powder coriander, turmeric, )
3 tbsp lemon juice
Dash of paprika 
2 chilli pod, chopped 
1 tbsp paprika 
4 cups long grain rice
5 tbsp oil for rice
5 cups boiling water
½ tsp salt
For garnish:
2 Hot Pepper sliced 
1 tsp paprika


1.In a small bowl, soak saffron and dash of cardamom in rose water. Set aside.  
2.In a small pan, cook blended tomatoes on medium fire for 10 minutes. 
3.In another pan, heat 6 tbsp olive oil, brown onions. Add cooked tomatoes, parsley, coriander, garlic, first amount of paprika, mixed spices and lemon juice. Cook and stir for 5 minutes. Add tuna, simmer for 3 minute. Take off fire. 
4.Wash rice and soak in water for 30 minutes. Drain and cook in boiling water, salt and oil. Boil, simmer till water absorbed. 
5.In a deep pan, put a thin layer of rice, even surface. Add tuna mixture, then remaining rice. Pour saffron mixture on one side of rice surface. On the other side, sprinkle second amount of paprika and chopped chilli. Sprinkle remaining olive oil on top. Cook covered on low fire for 15 minutes. 
6.For serving, take top spiced rice aside. Turn pan on serving plate. Garnish top with spiced rice.
