2 tablespoons olive oil
2 cups chopped onion
3 cloves garlic, minced
2 teaspoons toasted cumin seed, ground
1 can Goody sieved tomatoes
3 cups vegetable stock
3 carrots, cut diagonally into 1cm thickness
2 medium potatoes, cut into 1cm pieces
1 can Goody chickpeas, rinsed drained
salt and pepper to taste
2 tablespoons minced fresh cilantro
1.In a casserole heat the oil over moderate heat until hot. Add the onion and cook, stirring occasionally, for 5 minutes, until golden in color. Add the garlic and cumin and cook, stirring, 1 minute.
2.Add the sieved tomatoes and broth, bring liquid to a boil. Add the carrots and potatoes, and chickpeas, check seasoning, add salt and pepper if needed.
3.Cover and leave to simmer 10 minutes until vegetables are just tender. Stir in the cilantro. Serve
