Ingredients

1 pack of Goody Vermicelli Cut
4 tbsps of Olive Oil
2 Goody Chicken Stock Cubes, dissolved in 6 cups of Water
1 Bay Leaf
Marinara Sauce:
¼ cup of Olive Oil
2 tsps Garlic, Mashed
1 can of Tomato Paste
2 cans of Goody Chopped Tomatoes
2 Tbsps Basil Leaves, chopped
1 tsp of (Salt, Black Pepper, Paprika, and Dried Oregano)
Meat:
1 ½ kg Beef, minced
½ cup of Onions, finely minced
1 Tbsp Parsley, finely minced
1 tsp Garlic, chopped
2 whole eggs
1 tsp Salt
1 spoon of Black Pepper
½ cup of Rumi Cheese, grated
1 cup of Breadcrumbs
½ cup of Sparkling Water; or Plain Water if not possible
Garnish:
¼ cup of Parmesan Cheese
¼ cup of Basil Leaves
 

Method

1.To Prepare the Marinara Sauce:In a large pot over medium heat, heat the olive oil and fry the garlic for a minute, then add the tomato paste and chopped tomatoes and leave them until the mixture boils, then add the remaining ingredients and stir well. Simmer the sauce for 10 minutes or until the sauce becomes thick, and then take it off the heat.
2.To Prepare the Meat:In a deep bowl, mix together the minced meat, onions, parsley, garlic, eggs, salt, black pepper, and rumi cheese; mix well, then add the breadcrumbs and stir them together.Gradually add the water to the mixture, and leave it until the meat becomes soft and incorporated at the same time. Shape the meat into medium walnut-sized balls. In this recipe, use ½ kilogram of meat, and keep half a kilo in the refrigerator to be used later on.
3.To Prepare the Vermicelli Soup:In a medium pot over the heat, heat the olive oil and fry the meatballs until browned and then place them in another bowl.In the same pot, add 3 cups of the Marinara sauce, a chicken stock cube, and a bay leaf, then leave the mixture over medium heat to boil; then add the vermicelli and meatballs. Lower the heat and stir for 10-12 minutes until the vermicelli is cooked. Add more water if needed.Garnish the dish with mozzarella cheese and basil leaves, and serve immediately.
