For the sauce:
1 kg GOODY Tomatoes peeled and chopped.
1½ onions, finely chopped
3 tablespoon tomato paste
3 cloves garlic, finely chopped
1 stick celery, finely chopped
¼ cup olive oil, good quality
1 tablespoon dry basil
1 teaspoon sugar
Salt and pepper, to taste
For the pasta and additions:
1 pack GOODY Whole Wheat Pasta, cooked Al Dente
1 carrot, peeled and cut into thin strips
1 Large onion cut into wings
1 zucchini cut into strips
4 chicken breasts, cleaned and cut into thin strips length wise
Flour for dusting the chicken:
Sweet paprika powder, salt and pepper for seasoning the chicken
½ cup olive oil
2 tablespoons butter
1 cup Parmesan shavings
1.For the sauce: Put oil in saucepan on high heat for a few minutes to heat, add garlic and onion and cook until translucent.Add celery, cook until soft.Add tomatoes and tomato paste, stir and bring to boil.Add sugar and basil, stir and reduce heat to low. Leave to simmer for 1 hour, stirring occasionally. Add salt and pepper to taste. Simmer further for approximately an hour, until oil separates from the sauce.Use a potato masher to make the sauce a smoother consistency, or use a hand blender. set aside.
2.For Additions:Season chicken strips with paprika, salt and pepper, then dust with flour.
3.In a hot pan, add some olive oil and a bit of butter at a time, sauté chicken in bunches until brown on all sides, set aside. In the same pan, add remaining olive oil and butter, start by cooking the carrots for 5 minutes, cover pan.Add onions, cook for another 5 minutes on medium heat, then add zucchini.Return chicken to pan and cover with the pre-prepared Napolitana sauce, cook until chicken is done.
4. Place pasta in serving dish and top off with sauce, use the Parmesan shavings for garnish.
