1 brown onion chopped
4 garlic cloves minced
1 can Goody white beans
1 can Goody chickpeas
2 1⁄2 cups Goody Sieved Tomatoes
1 tbs fresh rosemary
1 tbs fresh thyme
2 tsp smoked paprika
200 gm baby spinach
Finely grated Parmesan
Micro herbs to garnish
Slices of arPsanal bread
Salt and freshly ground black pepper 


1.    Over medium heat add olive oil to a non-stick skillet. Sauté the onion, leeks, and garlic until translucent and fragrant. Add the white beans, chickpeas, sieved tomatoes, rosemary, thyme and smoked paprika to the pan. Mix until combined. Simmer gently until all ingredients have warmed through. If the mixture seems too thick you can add a bit of water to loosen it up. Add the fresh baby spinach leaves and mix till wilted.

2.    Place into serving bowls and top with finely grated Parmesan cheese. Season. Garnish with micro herbs. Serve with thick slices of artisan bread to scoop up the baked bean stew.
