For the dressing:
2 tsp finely grated fresh lemon zest
2 tbsp fresh lemon juice
2 tsps Goody mustard
1 tbsp Goody honey
1 tbsp Goody Cider vinegar
Salt and freshly ground black pepper
2 tbsps sesame olive oil
For the salad:
3 small zucchini, trimmed and thinly sliced
3 cups Goody Beets, drained
¼ cup fresh flat-leaf parsley, chopped
¼ cup fresh mint leaves, torn in 1/2 lengthwise if large
1.For the dressing: In a large mixing bowl, whisk together zest, juice, mustard, honey, cider vinegar, salt, and pepper in a large bowl until combined. Slowly whisk in the sesame oil.
2.Add zucchini, beets, and herbs; toss to coat. Serve immediately.
