- For the dressing, place all the ingredients in a blender and blitz until smooth and bright green.
- For the salad, set a large frying pan over a medium-high heat. Brush the halloumi with olive oil and fry for 2 minutes per side, or until the halloumi is golden brown.
- To assemble the salad, spread half of the dressing over a serving plate and top with the salad leaves, cucumbers, avocado and green beans. Top with the halloumi, scatter over the pine nuts and coriander and drizzle with the remaining dressing before serving.
