Mexican Pasta Salad

Ingredients

  • 3 and 1/2 cups of ready cooked Goody farfelle pasta
  • 1 cup Goody canned corn
  • 1 cup Goody black beans
  • 3/4 cup assorted sweet bell peppers, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup packed cilantro, finely chopped
  • 1 ripe avocado, pit removed and chopped
  • Optional: Fita or parmesan cheese

 

Dressing:

  • 3 tbsps olive oil
  • 3 tbsps rice vinegar
  • 5tbsps squeezed fresh lime juice
  • 1 tsp white sugar
  • 1/4 tsp garlic powder
  • 1 tsp and 1/2 chili powder
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1 tsp salt


Direction

  1. Stir together the Goody pasta, corn, black beans, sweet peppers, cherry tomatoes, onion, and cilantro. Add avocado last (and only to what you are eating; don’t add to any salad you have planned for leftovers).
  2. In a bowl, combine all of the dressing ingredients.Mix well. Pour the dressing over the pasta and vegetables. Stir to combine.
