Potato Salad with Mayonnaise and Mixed Vegetables

Ingredients

  • 2 Boiled Potatoes, cut into cubes
  • ¾ cup of Boiled Mixed Vegetables (carrots and peas)
  • ½ cup of Goody Whole Kernel Golden Corn
  • 3 Tbsps Goody Mayonnaise
  • 2 Tbsps Green Coriander, minced
  • 1 Whole Lemon, Squeezed
  • ¼ tsp Goody Mustard
  • Salt and Black Pepper to taste


Direction

  1. In the serving dish, place the boiled potato cubes, and add all the remaining ingredients; mix them gently until the ingredients are incorporated with the potatoes.
  2. Serve inside lettuce leaves and garnish with coriander leaves.

Note:
Do not boil the potatoes for too long so it will not crumble.

Idea:
You can add some chopped apple pieces or celery, or add any type of vegetables preferred by your family members.
