Quiche Muffins 3 Ways

Ingredients

      Olive Oil for Brushing the Muffin Tins

      For the Mushroom Quiche:

  • 6 Eggs
  • ½ cup Goody Sliced Mushrooms, drained
  • ½ cup freshly grated Cheddar cheese
  • ½ cup fresh Spinach, chopped
  • ¼ cup medium onion, diced
  • Salt and Pepper to taste

For the Beans Quiche:

  • 6 Eggs
  • ½ cup Goody Red Kidney Beans, rinsed and drained
  • ½ cups freshly grated Red Cheddar cheese
  • ½ cup tomatoes, diced
  • ¼ cup Red onion, diced
  • Salt and Pepper to taste

      For the Corn Quiche:

  • 6 Eggs
  • ½ cup Goody Corn, drained
  • ½ cup tomatoes, diced
  • ¼ cup spring onions, diced
  • ½ cups freshly grated Cheddar cheese
  • ½ cup fresh coriander leaves, chopped
  • Salt and Pepper to taste


Direction

  1. Preheat the oven to 180 degrees C. Brush the muffin tins with olive oil
  2. For each quiche type, get a mixing bowl, add the eggs and whisk until beaten, mix in the toppings and whisk until well combined.
  3. Ladle the eggs mixture in each muffin tin. Place in the oven for 25 minutes until cooked through. Serve.
