Set a large heatproof bowl with the condensed milk over a pan of barely simmering water. Heat for 2 hours, whisking every 15 minutes until a deep golden colour. -

Remove from the heat and stir in the date paste and salt.

Grease a 30 x 30cm tin generously with oil. Tip the caramel mix into the tin, sprinkle with extra flaky salt if you wish, and leave to set overnight in the fridge.

Cut into 24 squares and wrap in baking paper. Keep in the fridge until it’s time to gift.
