In a non-stick skillet, over medium/low heat, add apples, sugar, cinnamon, nutmeg and seven spices. Stir, combining well, and leave to cook until the apples are soft. Add 1 tbsp of butter and cook for another 2 minutes. Strain and keep the liquid.

In a non-stick pan, add butter and leave to melt over low heat. Then, add flour and stir for 2 minutes. While stirring, gradually add the milk. Then, add 1/4 cup of water/ Cook and stir over medium/low heat until boiling. Add vanilla, and continue to stir.

Fill cannelloni with apple stuffing. Then, in a baking dish, add a thin layer of the bechamel mix and arrange cannelloni on top. Add liquid from the apple mixture, and top with the the bechamel mix to cover the cannelloni.

Heat the oven to 180 degrees. Then, cover the baking dish with foil and bake for 45-50 minutes. Remove the foil, and continue baking until golden. Serve hot.
