preheat oven to 230°C.

To make the sauce, whisk all sauce ingredients in a small bowl until smooth and creamy.

For serving, arrange the potatoes on a serving plate, top with the pulled beef mixture, drizzle with blue cheese sauce, sprinkle with parsley, and serve immediately.
