Family Fava Beans Bread

This sharing, pull-apart family fava beans bread is likely to become a firm favourite with diners of all ages – serve for breakfast, brunch, lunch or as a hearty snack. The homemade, herb-brushed baked dough balls taste pretty fantastic as is, but once torn off and dipped into the soothing mashed fava beans they really come into their own.

    To Prepare the Dough:In a deep bowl, mix the dry ingredients together, then add the cold butter and break it quickly with your hands (so that it will not melt) until you obtain pea-size butter pieces wrapped in flour.

    Add the milk and eggs and mix a little by hand until a dough is formed. Knead the dough over a floured surface from 10 to 15 times, adding a little dough if needed.

    Place the dough in a suitable bowl, wrap it in a plastic bag, and then refrigerate it overnight. Take it out of the refrigerator and leave it for an hour at the kitchen’s temperature.

    To Prepare the Fava Beans Bread:Heat the oven at 180oC.

    Grease a 10 to 12-inch diameter baking sheet with butter, and then place a 5-inch diameter oven bowl in the middle of the baking sheet.

    To Prepare the Herb Dressing:In the bowl, mix the ground garlic with the thawed butter, and set it aside. Place each of the remaining herb dressing ingredients in small separate dishes.

    Shape the dough into small balls the size of a tennis ball, then dip the balls in butter, and then immediately dip them in the herb mixture, while stirring from all directions. Stack the balls in a circular manner in the sheet around the small bowl. Repeat dipping all the dough balls until the entire amount ends.

    Bake in the oven for 30-35 minutes until it turns golden. At the 25th minute of baking, cover the sheet with tin foil, so that the dough’s color will not change into dark brown. Take out the sheet and let it cool for 5 minutes, then use a plastic knife (spatula) to remove the dough from the edges.

    Heat the beans in the oven, then remove the circular bowl from the middle, and place the beans in its place, and pour a little olive oil over it.
