Herby tuna burgers with crunchy slaw

Meaty chunks of tuna are a fresh, light and healthier alternative to beef mince, and make for a quick and easy to cook burger.

    Preheat the oven to 180C. Cook the potatoes in boiling salted water for 15 minutes until tender. Drain and leave to steam. While the potatoes steam, mix the mayonnaise, onions, basil and tuna in a large bowl.

    Mash the potatoes then fold in to the tuna mixture until combined. Season then set aside. Put the breadcrumbs, flour and egg in separate shallow dishes.

    To make the slaw, mix all of the ingredients in a large bowl. Season.

    Shape the tuna in to 4 patties. Coat in the flour, then the egg, and finally the breadcrumbs. Arrange the patties on a baking tray lined with baking paper. Spray with oil and bake for 12-15 minutes, or until cooked and golden on the outside.

    To assemble the burgers, spread your choice of condiment on the base on the buns. Top with the rocket, the patty, tomato and the slaw. Add the lids and serve.
