Fettuccini With Four Cheese Sauce
Oozing, melting, rich and creamy: this fettuccine with four cheese sauce combines edam, parmesan, mozzarella, and blue cheese for a real treat. A truly indulgent meal, this dish is best served with a sharp green salad on the side to counter the delectable richness of the sauce.

Cook the fettuccine as per instructions on the packaging. Drain and set aside
In a saucepan, Heat butter till it becomes foamy. Lower the heat and add flour. Keep stirring with a wooden spoon until cooked. Slowly add the milk whilst whisking and then add the cream and simmer until it thickens. Add the rest of the cheese and thyme sprigs and simmer on low heat for 5 minutes. Add water to loosen the sauce; season with sea salt and pepper. Toss the fettuccini in the sauce. Serve with crusty bread.
