Preparation
Step 1
In a large bowl, add the arugula, grilled eggplant, pomegranate seeds, feta cheese, toasted walnuts, and crispy fried onions.

For the sauce In a small bowl, whisk together the tamarind, lemon, salt, pepper, apple cider vinegar, and mustard until well combined.
