How to Prepare the Peanut Dressing: In a medium-sized bowl, put the peanut butter, vinegar, honey, soy sauce, lemon juice, and oil, and mix them well until incorporated; and then season with salt and black pepper.
How to Prepare the Mango Salad: In a large salad bowl, mix the mangoes, carrot, bell pepper, red onion and coriander leaves gently using a wooden spoon. Afterwards, garnish with peanuts, green onions, and a little bit of dressing. Place the remaining amount aside if desired.
