Preparation

Step 1

Preheat the oven to 180oC. Grease a 25 cm pie or cake tin, set aside and line with parchment.

Step 2

Cook the penne till al dente according to the packet instructions. Drain and set aside.

Step 3

In a large bowl, mix together all the ingredients until they become well incorporated. Place in the tin and press down gently. Top with a good handful of extra cheddar cheese. Bake in the oven for about 40 minutes until the top has browned and the frittata is cooked through. Cut into slices and serve.
