Vegetable Parcels With Puff Pastry

This quick recipe for vegetable parcels with puff pastry makes the most of short-cut ingredients (here’s looking at you ready-rolled pastry and frozen veggies) to create an elegant, easy-to-eat snack that would be ideal as part of an iftar table spread.     Heat the oil and add the onions, stir until it turns yellow, then add the potato cubes and stir it for 2 minutes. Add water and leave it for a couple of minutes.Add the Goody peas and carrots and the chicken bouillon cube, stir the mixture until the potatoes are done and the water runs clear completely, and then leave it to cool.

    Flatten the Puff Pastry squares, then cover them with the vegetables. Fold them in a form of a parcel, and then brush them with the whisked egg. Put them in the oven at a temperature of 400 F until the pastry becomes golden.
