Fava Bean and Egg Casserole
A one-pan recipe for breakfast eggs that is hearty, nutritious, high in protein and seriously delicious. This healthy, low fat fava bean and egg casserole delivers flavour in abundance and would make a fantastic brunch dish - cook until the yolks are golden and runny, then bring to the table and serve with flatbreads for dipping and dunking.

Heat the oven at 350 degrees.
In a deep pot over medium heat, put the oil and then add the onion and Garlic; stir until it wilts. Afterwards, add the salt, black pepper, cumin and chicken stock cube, and then add the beans and mix well. Take the pot off the heat and add the coriander and tomato.
Add the bean mixture to a pottery casserole, and make several holes at the edges.Break an egg in each hole, and place the casserole in the oven for 10 minutes or until the eggs are cooked.
