Crunchy satay veg salad
It’s not a surprise to know that we love colorful veggies – this is one of our favorite ways to prepare and serve them in a light, bright and crunchy salad. There’s no cooking involved, just a texture-packed arrangement of fresh vegetables tossed in an addictive peanut butter dressing that you’ll make once and want to try again and again

For the dressing, blitz all the ingredients together until smooth. The dressing will keep in a sealed container in the fridge for up to one week.
Prepare all of the vegetables and put in a big bowl. Once you’re ready to serve, pour over half the dressing. Mix well with tongs, adding more dressing if needed – you want just enough to coat the salad. Stir in the nuts, seeds and herbs then serve with your choice of protein
