For the dressing, blitz all the ingredients together until smooth. The dressing will keep in a sealed container in the fridge for up to one week.

Prepare all of the vegetables and put in a big bowl. Once you’re ready to serve, pour over half the dressing. Mix well with tongs, adding more dressing if needed – you want just enough to coat the salad. Stir in the nuts, seeds and herbs then serve with your choice of protein
