Preparation
Step 1
On a cutting board, place a sheet of plastic wrap and wrap the chicken breasts with it. Using a meat mallet, pound the chicken until it reaches the desired thickness.
Step 2
In a bowl, mix the buttermilk with the spices until well combined. Add the chicken breasts to the marinade, cover the bowl with plastic wrap, and place it in the fridge for two hours.
Step 3
In a small bowl, mix Goody's lemon mayonnaise with Goody's pesto sauce, and set the mixture aside.
Step 4
In another bowl, add the flour and season it. Then coat the marinated chicken pieces in the seasoned flour and set them aside.
Step 5
For the roasted tomatoes, place the cherry tomatoes on a baking tray, drizzle with olive oil, sprinkle with salt and black pepper, and roast them in a preheated oven at 250°C for 10 minutes.
Step 6
For the Parmesan crisps, place a layer of grated Parmesan cheese on a non-stick baking tray and bake in a preheated oven at 180°C for 5 minutes until crispy.
Step 7
In a deep pan, heat oil over medium to high heat, then fry the chicken until golden and crispy.
Step 8
to prepare pesto mac and cheese, in a bowl add the ready made mac and cheese and mix it with 2 tsps of pesto sauce and sit aside.
Step 9
On the bottom half of a toasted brioche bun, spread a layer of the sauce, followed by the chicken , melted mozzarella , pesto mac and cheese, arugula, roasted cherry tomatoes, and finally the Parmesan crisps.
Step 10
Serve the burger immediately with extra Parmesan crisps on the side.
