Fried Veggies and Chickpeas Sandwich

Fried vegetable sandwich recipe,that is filling, quick to prepare, and suitable for summer outdoor seating.

    To prepare vegetable, start by peeling the eggplant and slice it into medium thickness, cut cauliflower into small florets.

    Peel potato and cut into sticks to make French fries, soak fries in cold water for 10 minutes then strain and season with salt.

    In a large deep pan, heat frying oil until it reaches 185c, meanwhile pat dry the eggplant as excess water will come out of it because of the salt.

    Fry eggplant, potato and cauliflower until its golden and cooked.

    Transfer to a wire rack lined with paper towel to remove excess oil.

    To make the sauce, add all ingredients in a food processor and blend until smooth and creamy, add more water and lemon juice if needed.

    To assemble, cut pita bread into halves and stuff the bread with tomato slices, eggplant, French fries, cauliflower, chickpeas, pickles, and mint, finally drizzle with tahini sauce and serve.
