Preparation

Step 1

To cook the beef, Season the beef with salt and black pepper. In a large pot over medium-high heat, heat the vegetable oil and sear the beef on all sides until browned. Add the bay leaves and set aside while you prepare the sauce.
 

Step 2

In a blender, combine all the sauce ingredients and blend until smooth. Pour the sauce over the seared beef, cover, and cook over low heat for 3–4 hours until the beef is tender and pulls apart easily.

Step 3

when cooked, Remove the bay leaves, shred the beef, and mix it back into the sauce.

Step 4

To assemble the sandwich, layer bread with beef, cheddar cheese slices, Mexican salsa, red onion slices, Goody corn, and a drizzle of Goody chipotle mayonnaise.

Step 5

In a hot pan over medium heat Toast the sandwich until golden and the cheese has melted. Cut in half and serve warm.
