Slice a fresh focaccia in half widthways, then cut each half in to sandwich-sized squares.

Brush with olive oil and griddle until charred. Spread one side of the bread with Goody Lemon Mayonnaise Taste Enhancer then stack with fresh slices of tomato, avocado, mozzarella, basil leaves and Goody Green Pesto.

Season each layer with salt and pepper, and finish with chilli flakes and rocket leaves.
