They are considered a vegetarian protein source and vegetarians can eat them as a substitute for animal sources of protein (meats). Legumes contain other nutrients, such as carbohydrates, iron, calcium, potassium, magnesium, manganese, phosphorus, folic acid, some B vitamins and dietary fiber that help reduce levels of cholesterol and sugar in the blood.
