Preparation
Step 1
Preheat oven to 200c. in a baking dish toss cherry tomatoes with olive oil, salt, and pepper. Roast for 10–15 minutes until soft and charred
Step 2
To make eggs, in a bowl Whisk eggs with cream, salt, and pepper. Cook in a nonstick pan with butter over low heat stirring until soft and fluffy.
Step 3
To assemble sandwich, layer chipotle mayonnaise on a toasted ciabatta. Add turkey slices, avocado, scrambled eggs, and roasted cherry tomatoes on top.
Step 4
Drizzle with chipotle mayonnaise then cover with other half of the bread, slice in half, and enjoy warm
